My fitness pal counts everything actually. I already stay low in carbs and have very little sugar.
I won't do low carb. I just can't do it. I can't eat any cheese or dairy, so it would be too restricting for me. My daughter does it with no problem.

When I'm really serious about losing some weight, I always count the calories, and I do it by weighing and measuring everything and counting everything, all vegetable and fruits as well.
Many fruits and vegetable have a good deal of calories, and I know if I ate unlimited amounts of them, it would add up to be too many calories to accomplish any real loss. It might be a nice, healthy diet, but I just wouldn't lose at a reasonable weight.
I count extras, too, like ketchup, mustard, certain other condiments because they have calories too.
Like another poster, I'll add an extra 10-20 for lettuce as opposed to weighing it.
The weighing and counting seems fanatical, but it's hard to lose weight now that I'm older and counting calories has always worked for me.
It's not the only thing I keep in mind, I also strive for a low fat (not non-fat) diet well balanced among all food groups.
It's the only way I can keep to a plan.

I use Noom and track everything. Even when I make myself a salad, I enter the lettuce, dressing, boiled egg, ham, etc all separately.
By keeping track of what I eat, it helps me constantly be aware of what I am consuming and staying accountable. I don't have a lot of weight to lose, but I like to remind myself of what I'm doing and eating so I stay on top of it.
Noom is an app that tracks your steps, counts your calories and provides little articles about eating healthy everyday. You can also enter your workout (along with the intensity level and duration) into the app.
I have done a few cycles each of P90X, Brazil Butt Lift and more recently, Physique 57. All 3 have worked for me in slimming all over, but specifically my thighs and hip area (my problem zones!). The last few weeks I have done strictly Jillian Michaels DVDs. Her videos definitely gets the heart rate up in a short amount of time and are very effective. I feel completely spent by the time the workout is over.

It's important to measure/count everything for a while...even vegetables. Lettuce, celery would be minimal, but it's a slippery slope...suddenly we begin to think vegetables becoming corn, avocados...even processed foods like tomato soup...and the calories/sodium/fat adds up fast.
