This is my go to winter soup.  We made this on NY day because BF has been sick with the upper respiratory crud and I am hoping not to catch it.

I am a cauliflower lover as well, so these will be right up my alley.  

 

I really will have to make a shopping list.  You are a much more creative cook than I could dream of being!

@lolakimono  BF is lucky to have you. This one looks do-able.   I wonder if I could do it with chicken breasts, since that's all I have in the house.

Normally, I don't follow recipes, but I would not use breasts for this because they will dry out from the long cooking time and they lack the fat content to make the soup get "creamy."

I actually pulled out my paper bags and made homemade popcorn yesterday.  You guys are way too fancy for me.  Smiley Happy

Japanese Sweet Potatoes

Yellow Sweet Potates

 

These are my 2 new favorites!  So sweet & creamy!

 

-) 1.5 lbs of sweet potatoes, cut into fries & no-oil back for 35 minutes.

-) Dipping sauce, soy yogurt mixed w/ hot sauce.

-) Orange/apple for dessert

Dinner done.

 

Tip:  Siplat silicone sheet was my best purchase for 2015!

Tonight was brown rice topped with roasted cauliflower, carrots, and butternut squash. Drizzled a little curry sauce over it.

Starch & Veggies

-) 1/2 pouch of Vegetarian Chili (Tabatchnick brand)

-) 1 cup Jasmine Rice white/brown mix

-) 2 heads of romaine lettuce

Used the lettuce as 'burrito' holders for chili & rice mixture.

 

Baked apple w/cinnamon for dessert.

Also, since it's Monday, I have 1 Brazil nut for the week...for selenium.

 

Between the fragrant Jasmine rice & apple cinnamon...it smells great!

These meals are sounding great, and so many healthy choices!  

 

I can't say I had a particurly healthy meal tonight.  I got home from work just before 9:00 p.m. so I had a protein shake made with almond milk. (I use unsweetend almond milk in place of milk.) I will be going to sleep soon and don't want a heavy meal sitting in my stomach.
