I am sure this has been discussed before, but it is brand new to me. This is the start of my 3rd week of eliminating as much gluten from my diet as possible. I am reading books, and searching the internet and will see my dr. on Tuesday to see if I have Celiac disease or gluten intolerence. Actually, they both do the same damage to ones small intestine and most of the rest of the body. There are many more foods one can eat than not, but the biggest culprit is all of the "hidden" gluten in some foods. We have never used very many prepackedged foods which is good but looking in my pantry at the mixes and fillers, etc that I have...the local food bank is going to get a lot of stuff soon.
I have to buy new pots and pans and cutting board and untensils for me as even a particle of gluten can cause severe reactions...that are not fun, believe me.
Already, I am feeling so much better and have not had many bad symptoms since about the 4th day. I am seeing this as a positive change as I have lost almost 10 lbs. already. And actually want to start excercising again.
Anyone have suggestions, or just want to chat about this...I am ready to learn all I can and am now going to make a yummy sounding receipe for meatballs.
