I'm going to have to get this book. I've been diagnosed with Celiac Disease (1.5 years!) and also a diabetic (33 years!). I tell you, the diabetic lifestyle is easier to deal with than going completely gluten-free. I've been slowly expanding my gluten-free cooking expertise and I love the gluten-free Bisquick mix. Makes the best quiche crust.
I also found a lot of gluten-free recipes on Pinterest.
A site I spend way too much time on the way it is.

Everything tastes SO good and I'm SO satisfied and I feel SO well (and SO much younger!) that I just don't want to mess with success. Cat, I just jumped in with both feet, no 30 Day preliminary.
Violann, do you eat potatoes occasionally? Just curious.
I already can't eat any dairy (both lactose intolerant and allergic). I quit eating nuts because anything high fiber (I think) makes me sick. I'm thinking bread is another culprit. In fact, I quit eating nuts and nuts might not be the problem. It might be bread. I haven't eaten nuts and bread and I'm just fine.
Oh, I do eat oatmeal every day with no problems.
I need to lose 40 pounds AGAIN. So I'm thinking of eating just fruits, veggies and protein with oatmeal in the AM. What do you think?
Is oatmeal a no-no also? I guess that is a grain. It seems that is the only grain type thing I can eat. And it is easy for breakfast.
For a milk substitute I use almond milk. I only eat that on my oatmeal and in smoothies.
Thanks for any advice.

Fiber may be just what you need!

It all seems very interesting and have been eating "wheat free". for a week now and have lost 7 lbs! I have to admit I am feeling a bit more energetic especially since I have a parathyroid problem. I am having surgery to remove 2 nodules in the next few months by the best surgeon in Ct. I am craving bread and pasta so badly but won't give in. He has a recipe for flaxseed wraps which I will make later. Have been eating quinoa which I made with carmelized shallots and red peppers which came out delish! Also loving this shallot vinegrette dressing. To be truthfull don't know if I could eat like this for the rest of my life. The thought of having pizza made with a cauliflower type crust does not appeal to a "Italian" bred girl such as myself. Any thoughts from those who have been eating like this for a while? No I do not have celiac disease. Thanks.I felt so good after I started that didn't even think about it. I think our memory of certain foods is in some way triggered to the wheat addiction that happens in our brain. I've always been in the kitchen experimenting, so the change was easier. It's a different lifestyle. I think some one posted on one of my earlier wheat belly threads that as time went by, two or threes later, she felt better and better with many more health benefits. I'm eight months in and won't go back. I've lost 16 lbs., but once again, I like feeling good, not just losing weight. We ate pizza for the first time yesterday. I also jumped right in as someone posted, so I hadn't tried any substitutes until recently. I purchased a gluten free pizza shell and topped it off myself and had delicious pizza in ten minutes. It was a nice change. I probably couldn't do it all the time. I agree with someone else here who said everything tastes better. I'm happy with just protein, veggies, nuts, and little fruit. I enjoy my coffee and tea. I practice baking with einkorn flour. I have a vitamix, so I make delicious smoothies, dressings, sauces. It's a whole new world. I love it. It's more work because one has to do more from scratch as items are not as readily available. I love not being hungry until I'm truly hungry. Hope that helps. Has anyone read Grain Brain? I read a sample. It's another testimony to eating less processed, GMO foods, etc.
