About butter beans, baby lima beans, Fordhook lima beans........
Butter beans down South can be either a very light green but more often pale ivory, almost white. I don't particularly care for them, because they always seem mealy after cooking.
Baby limas (much less expensive than other limas in local stores here) are smaller, thinner green versions of the common Fordhook lima beans, which are bigger and also green.
We eat a lot of limas, both big and baby ones, at our house, along with black-eyed peas, and many different versions of limas mixed with other vegetables (corn, peas, okra, cooked tomatoes, green beans).
Anything goes at our house when it comes to vegetables---fresh, frozen or the very well-seasoned canned versions from Glory Foods or Margaret Holmes.
