I like all of those red foods. Yummm.
I have a sour cherry tree in my yard, so I have tart cherries all year long in my freezer.

I didn't see it but I don't limit what I eat & enjoy everything I like...red meat, chicken, fish along with great vegs & fruits. I didn't mean to take your post off topic.

I crave raw red beets grated in salad, and I make a mean salad with steamed/roasted golden beets with sweet onion, Italian parsley, celery, and fennel. I put a small amount of red beats in my fresh juiced v8 juice. Yummy!
And don't get me started on cherries. When we go to the cherry farms and get a bucket to pick the cherries...I eat more than I put in the bucket. They don't make any money when I'm working the cherry trees!

The chart said tart cherries. I guarantee you would not be eating them right off of the tree while picking them. Tart cherries are actually a super food, unlike sweet cherries.
I have a tart cherry tree and freeze them in June when they are ripe. When I thaw them out, there is always plenty of tart cheery juice as a run off. I save it to use in recipes. It is full of anti oxidants and really good for you....but the taste is sour...you will pucker up.
Even the birds and deer won't bother them.
Your salad sounds delicious. I never thought to mix celery, fennel and parsley in my beet salad. I will give it a try.

Many moons ago while living in CA we went cherry picking and brought home way too many...froze them and had great treats during the summer months.
