Anyone else out there tying to gain weight?

I'm definitely an ectomorph with a fast metabolism. I'm kind of long and lean. 110 and almost 5'6. I've always been thin and I tend to lose weight when I'm stressed out, or have a cold, flu or whatever. I find it very had to gain weight. Even at 40 yeas old. I have some limitations to what I can eat because I'm sensitive to wheat ( although now my dr. say's it could be yeast ) and can't have dairy products.

I recently read that I have to eat 500 extra calories a day to gain a pound a week. And that one healthy way to do it is with grains, bread crackers etc. Has anyone else gone this route? What has worked for you? I want to gain 5 or 6 lbs.
