Yes, your tablet will work. Almost all hotels and b&b have free WiFi. We use it all the time and everywhere. Also you can Skype for free.
In fact we use for all that my husbands cheap non apple tablet. I use my iPad for photos.
Evening, when you are back to your room to rest , is the best time to connect with the US.

Fires/Kindles work from anywhere in Europe. Another rec for WhatsApp to keep in touch, but just use your usual email through WiFi on your Fire.
Also, there are a number of tourism and/or map apps that allow to download the info (including offline maps), so no worries if you have WiFi or data usage. Many cities have WiFi hotspots for free or that are included in a city card (for example, the Venice Card has this option).
You could also could buy an inexpensive pre-paid phone when you arrive in Europe and add data/minutes if or when you need it.
