I f you score the roast on top side, then as the meat cooks the seasonings and butter will flavor the inside of the roast rather than just the crust.

Maybe I am wrong, but I think Kansas City Steaks uses the oven door shut and oven turned off method.

I have had their prime rib many times and that is what the instructions said. I never followed the instructions.

I have never ordered anything from Rastelli and have never heard them talk about the closed oven door method.

@Carmie thanks. I may have mixed them up in my head.

Either way, ive watched a few times today and literally had to swallow hard, mouth salivating. Ive not had Prime Rib in years. Out of my budget to buy a whole roast but find cooking methods interesting to follow.

I realize it's been a few months since this forum, but I just received my first Rastelli's 4 lb prime rib that I purchsed during the Christams in July sale. I wanted to re-watch the video on how to prepare the prime rib, so I did some googling. I found 3 different videos. One is a video on Youtube from QVC 2 years ago and they are saying to cook at 475 degrees for 30 minutes then shut the oven off. And it comes with a sign to hang on the oven door that says DO NOT OPEN OVEN DOOR. So, you are correct, it was Rastelli's.

The other 2 videos have the newer method. I did notice a slight discrepancy though. One video says to put the seasoning on first, then the butter. The other says to put the butter on first, then season. It may not make a difference, but i'm curious if anyone has preference?
