In the recipe book that comes with the small pressure cooker, the vegetarian recipe for Mexican Rice and Beans uses chicken stock!  Oops!  Chicken stock is not vegetarian.  You could just substitute vegetable stock.

Thank you for the general info. on cooking potatoes.  I am vegan so I would have to change the recipe, eliminate the eggs, use vegan mayo, etc, but being able to quickly cook potatoes is a great convenience.  The little book that came with the cooker does not have general info. like this.  It also does not have enough food for vegans or vegetarians.  I am going to buy a cookbook that focuses on vegan pressure cooking.

Hi Meredith,

I recently purchased the Elite Bistro Pressure Cooker after watching you demo some fantastic looking dishes, and I ended up purchasing your cookbook which just came in today as well.  I do not have the guide to my pressure cooker, and I do not see a button option for 'Saute" or "Brown" which so many recipes ask for.  Can you tell me how to get that on the Elite Bistro?  I'd rather do it in the PC vs dirtying another pan and browning separately as that is one of the reasons of purchasing it.  Thanks!
