  • Breakfast is King w/ my Everything Bagel Strata I made on this week’s Step By Step Cooking w/ Stacey. Perfect for Easter or Mother’s day 
     
    Ingredients

    1lb Breakfast pork sausage
    Unsalted Butter
    1 large onion, chopped 
    1 bag fresh baby spinach (6oz)
    3 Everything Bagels, day old
    1 pint cherry tomatoes, halves
    1/4 cup fresh basil, chopped
    1 cup finely grated Parmigiano-Reggiano 
    1 cup shredded mild cheddar
    8 oz goat cheese
    8 oz brick cream cheese, cubed
    8 eggs
    2 cups milk
    1 cup half & half
    2 TB Dijon Mustard
    1/3 cup pesto 
    1/4 tsp cayenne pepper
    2 tsp Saltopia’s “Rock My World Everything Except The Bagel” infused salt (or plain Kosher salt) 
    Fresh ground pepper

    Step 1
    Brown Sausage in large skillet over medium heat. Break up into bite-sizes chunks & cook until no longer pink. 
     
    Step 2
    Melt 2 TB butter in same skillet and sauté onion over medium heat, cooking until golden brown, about 8 minutes. Meanwhile, cut bagels into bite-sized chunks .

    Step 3
    In extra large bowl, add baby spinach, sausage, cooked onion, bagel chunks, tomatoes, basil, 1 cup of Parm, 1 cup of cheddar, salt & cayenne and toss. In
    separate bowl, whisk together milk, half & half, eggs, Dijon & 2 Tsp Saltopia salt & fresh ground pepper. 

    Step 4
    Using butter, grease deep rectangular baking dish & arrange the bagel mix inside. Pour over egg mixture, especially over bagel pieces, then nestle cream cheese chunks & dollops of goat cheese all around. Dollop pesto throughout. Cover & refrigerate at least 4 hours or overnight. 

    Step 5
    Preheat oven to 400. Bake for 15 minutes. Reduce heat to 350 & bake approx 45-55 minutes. Remove & let rest a few minutes. Serve & Enjoy.
