I salvaged the 3rd batch that was a tad dry by putting a piece of bread in the zip lock bag and that really turned it around. Really softened it up.

If you all didn't know it you can put a piece of bread in brown sugar or in any bag to soften up cookies, fudge, etc.

Lesson learned was make only on no humidity day, learn when to stop cooking and do not over beat it.

Back in the late 90's close to Christmas here in Texas it was my third batch of fudge before it was finally decent enough for the office/courthouse clerk gifts I was passing out the next Monday morning.  My husband and son were tickled pink to have the first two batches and big spoons to enjoy but my arm was just wore out.  Total attempted and prepared that day 16 pounds of fudge and fudge syrup.  Love that Texas weather @SharkE

I've never even made a loaf of bread, but there were excellent bakers in my family who said never make candy in humid weather.

@SharkE  Let us know when you find that "sweet spot" of managing the Zo then I'll decide whether to splurge, depending on how fussy it is to work with.

Your challenges have inspired me to make something out of the ordinary today or maybe tomorrow.  What could go wrong?  LOL

BTW, I ordered the rotisserie add-on for the Philips grill.  It's still in the box, was on sale at WS.
