I gave that up. White bread I've made and turns out wonderful all the time.

Even give it away and have folks in my church can't wait for me to make the next batch. Queen of bread.

 

Ok

 

Now , we come to  whole wheat bread. Just gonna have to buy it on the rare occasion I want it. I've made it twice in last few days and it doesn't rise anything like white bread does. I use yeast that is considered top of the line, just  bought King Arthur 100% whole wheat flour, went on their website and read up on how the preparation is different ,studied it and put into practice.

 

That stuff just doesn't rise ! I know it's not suppose to rise high as elephants eye like white, but, it doesn't even raise that much the first time and the 2nd time in the loaf pan doesn't come to the rim  of the pan even.

 

I'm admitting defeat on this bread and buying a loaf. LOL

I use a breadmaker.  When I use a whole wheat mix it comes out great, when I make it from scratch and put it in the breadmaker, according to instructions is rarily turns out.  So I buy the mix.

If you are making bread using nothing but whole wheat flour the loaf will be very dense and doesn't rise much.   A good compromise is to use half whole wheat and half white flour in your recipe.  Try that before you give up.

I made that recipe from King Arthur 'Classic whole wheat bread' one loaf

 

Called for 3 1/2 cups of any kind of flour I used 2 cups wholewheat and one

1/2 cup of white whole wheat.

 

Guess I'm thinking  it should  be high and light.

I also use a bread machine. I don't make 100% wheat bread. It always turns out too heavy.

I make it with half whole wheat half bread flour or 2 cups wheat with 1 cup bread flour or 2 cups bread flour with 1 cup whole wheat.

I love bread with potato flakes in it since it seems to make it moist.

 

Both Make  a 1 1/2 lb loaf

 

 

 

Heavenly Whole Wheat Bread

 

1 c + 2 T water

2 c whole wheat flour

1 c bread flour

1 ½ t salt

4 T butter

2 T sugar

¼ c potato flakes

1 ½ t yeast

 

Put all ingredients in machine per your manual

 

Honey Whole Wheat Bread

 

1 c + 2 T Milk

2 c whole wheat flour

1 c bread flour

1 t salt

2 T butter

¼ c honey

2 t yeast

watched this video and mine looks like that, so, maybe I'm doing it right, but, this recipe makes way to much . just need one loaf. Hubbo wouldn't eat whole wheat if he was dying. LOL

Call King Arthur, refer them to the Q forum page to they can see your loaf of bread, they are expert bakers and very helpful, no your bread shouldn't look like that, high, mighty and dense is the key
