what's cooking for st pat's day?

[ Edited ]

I'm going to try my corned beef in my instant pot this year--cooks for 70 minutes then-- add the spuds, carrots and cabbage for another 2-3 in the corned beef juice. Have a lovely round loaf of soda bread,  a salad and fruit.

Just an update about my meal in the pressure cooker--

oh wow-- was it delicious!!! everything was tender and very flavorful. Cooked the meat for 70 minutes with a 15 minute release, took it out and put in the cabbage, spuds and carrots--right in the same liquid as the meat and cooked another 3 minutes---one thing tho--I didn't have the spice packet or   those spices to put in with the meat--but it was still really easy and tasty.  and have leftovers for today----there is a corned beef sammie in my future!!!

We too have a corned beef in the crock pot, with potatoes, and cabbage. I have yet to try irish soda bread but I hear a lot about it on here so it must be good. Your Dinner sounds very good! I was also planning on making my Irish Car Bomb cupcakes that I try to make every year, but my cake tins and decorative toppings are on a shipping delay, so I am scrapping it. Takes a while to make it all from scratch, the cake has Guiness beer in it, the center chocolate ganache has Jameson whiskey, and the icing has bailey's Irish cream. They are so darn good, but a lot of work. Next year.

I'm Irish and proud, but I do not like corned beef!  DH and I wearing our kelley green and I'm wearing my Shamrock pendant with an emerald in it that DH bought me one year, but we are just eating fish soup tonight.   DH is making the soup now.
