yes, demand is not keeping up with supply.

Many of the major food companies are switching to real vanilla in their products plus those of us who bake are becoming more choosy about the quality of our vanilla.

It's a very labor intensive crop

Yes it's expensive but my kitchen can't be without it.

Mine either, even just the McCormick brand I buy at the grocery store.

fortunately for me, the ladies on this Forum gave a heads up that the price of pure vanilla extract was going up a few years ago.  I went out and purchased a couple of large bottles at a reasonable cost.  I haven’t had to buy any for a long time.

I am so bummed. I bought the Mcormick large bottle from either Costco or BJ a few years ago. I'm sure it was way under $20 and I was more than thrilled. I finally finished it and again went to Costco. No brand name was $27.00. I went to BJ and they were selling Mccormick - BLENDED vanilla (mixture of flavoring and pure), what the heck?

I went to the supermarket and buy a small bottle. Just under $10 for 2 ounces. Yikes!

I was just reading an article from America's Test Kitchen who stated that their winner for vanilla extract was McCormick Pure Vaniilla Extract:

WINNER
RECOMMENDED
McCormick Pure Vanilla Extract

This vanilla won top praise for being “strong,” “rich,” and “spicy,” with a “sweet undertone.” It had “clear vanilla flavor with nice balance” and notes of “dried fruit,” “caramel,” and “chocolate,” “like Kahlúa or Bailey’s.” In pudding, it was deemed “a step above,” with an extremely “pleasing finish.”

$7.99 for 2 ounces ($4 per ounce)*

If you go to Amazon,  McCormick is being sold for $39.51 (subscribe & save) less 20% with the available coupon on the site for 16 ounces.  That brings it down to $31.60 or $1.98 per ounce.  VERY REASONABLE.

I've never done Subcribe & Save, but my sister does it all the time, and says it's easy to skip a shipment or cancel if you don't want any future shipments.  The 20% off coupon is also available on the one time shipment which is $2 more.

EDITED to add - I personally prefer the Nielsen Massey vanilla.
