using cashew sauce in lasagna

A few months ago, I was inquiring about using cashew cream in lasagna instead of ricotta or any white cheesy sauce, in the layers of lasagna,  as DD can't eat dairy---and it turned out really very good!! I added a few things to my recipe as per one of the recipes I got off this board--and it was so good. Was  still  thin so I need to thicken it up  bit but over all was a hit!!!

I too have made vegan lasagna and it is very good. Did you use Nutritional Yeast in your recipe?

@Love my grandkids ---I know!! Just have to try to thicken it up--it can't be heated too hot or it curdles so need to experiment with it more--is delicious as an alfredo sauce or yummy on a pizza too.

@wagirl  Trisha Yearwood had a good recipe for vegan ricotta using tofu...it works out really pretty decent in lasagna.....DW

 

Tofu Ricotta:

1/4 cup raw cashews, finely ground

14 ounces extra-firm tofu, drained and pressed 

1/4 cup nutritional yeast

3 tablespoons olive oil

2 tablespoons finely chopped fresh basil, or 1 tablespoon dried basil

Salt and pepper.

 

I use less yeast..and soak the cashews in hot water to soften...

 

Put in food processor till smooth...DW

@wagirl I could be totally wrong but could it be thickened with some corn starch?

I use cashew sauce for several dishes,,,,it is terrific!  Here is a bit of a twist,,..blend cashews with orange juice (or plant based milk), a banana,  and a couple of dates,,,,drizzle over fresh fruit....so good.  

 

Congratulations @wagirl  for stepping out of the box and trying something new.,...wish I was there to share!

@dancingwoman --oh that sounds great!! can see using tofu would thicken it a little.  will try this next time. also maybe adding the tofu would reduce how sweet the cashews are--thanks!!!

@Love my grandkids --that was my thought too-- have to warm on low and not let the sauce get too hot or it will curdle----have some leftover so maybe will try that.--thanks!!

@wagirl  I add a little garlic to it too...DW
