I've been tryng a new recipe a week for a few months now. Most have been ok --a few were good --others , not so much.

 

Last night I tried something called Arayes---crispy pitas stuffed with spiced meat. Annnnddd......not great Woman Frustrated the meat mixture was really good, but cooking it in pitas on a grill--was not easy and I ended up taking off the pita and just eating the meat. I used garam masala spice that is so flavorful and good in the meat mixture--the meat was beef, but the pitas tore altho they did get those great grill marks but got too soggy from the meat juices. I think putting the meat patty in a normal pita would be better--then putting in all the fixings for a nice sammie. I can see crisp lettuce, tomatoes and tzaztiki--wow--spelling that word is tough---sauce or hummus or tahini sauce would be good.

@wagirl   Your ideas for improving the recipe and preparing it look good to me.

 

As soon as I read how difficult grilling the filled pita was, I was thinking I'd heat it separately after I prepared and grilled what I wanted to wrap in it.  And then I read on - let us know if you try again.  I just bought fresh wraps yesterday without deciding what I'd put in them.  Thanks for offering ideas.

The recipe called for stuffing the meat mixture into the pitas, that were cut in half and then opened up, then brushing with olive oile on the outside and then grilling them ----think I used too much oil and also my pitas ripped while trying to open them up to put in the meat--think your suggestion would have been the way to go. Then I think the meat was over cooked too---it has to be at 160-165* and with the pitas, I think I'm going over cooked. But I will try them for lunch today--wish I had some cucumber sauce-----

@washgirl,
Have you considered cooking the arayes in an air fryer? I feel certain the AF will result in the crispiness these arayes should have.

I commend you for trying new recipes. I just put something in the oven called Forgotten Chicken. I saw it on the internet and it looked easy. Basically, a base of uncooked rice on the bottom of a casserole dish. Sauce  is a cup and a quarter of water whisked with a can of cream of chicken soup. Lay four chicken breasts on top. Then sprinkle with dry onion soup mix. Cover tightly with foil and bake at 350 for one and a half hours.

 

I wouldn't say it's eye pleasing, but it smells great while baking.

Sounds good to me!

 

I just made a dish similar to that last week, except I used Cream of Mushroom Soup instead, and used Chicken Broth in the place of water. Woman Wink

@AuntG ---that sounds good to me. Altho have to admit that using canned soup/dry soup mix  just makes me cringe!!! Yet I do have a recipe or 2 that I use those in and it is sooo delicious!!!  those things are so full of salt and chemicals----why do they taste so good???? Woman Frustrated

This week, I didn't use anything but my trusty little Breville oven--love that thing so much!! Found a recipe for a one called--Crispy salmon rice bowl--came from Eating Well and it was a winner. DD and I do enjoy a good rice bowl dinner. This one had the salmon and brown rice --then a few other veggies and my WONDERFUL homemade teriyake sauce. Serve a fresh fruit salad and that was all--Easy and very healthy.
