super easy and delicious recipes... starting off with balsamic tomatoes

feel free to post any and all super easy and GOOD recipes on this thread!

just made these recently and wanted to share the recipe.... it is so good. the only thing i did add was some fresh garlic as i was sauteeing the spinach. next time i will try adding some caramelized onions also. it is VERY easy and delicious and a great way to use up some summer tomatoes.

Marinate tomatoes in balsamic vinegar for 30 minutes. Lay on a baking sheet, season with salt and pepper. Bake for 7 minutes at 350 degrees. Then top with sautéed spinach and mozzarella. Broil until cheese melts.
