never having made sugar cookies before, can i make the cookie dough and refrigerate it if i don't want to roll and cut them the same day? thank you.

Yes, you can. You can even freeze it. It is actually easier to roll out if it is cold, if you are making cutout cookies. Still, you might find it easier to work with if left out of the fridge a bit. If making cutout cookies, work in batches, leaving some dough in the fridge until ready to roll out. It gets super sticky and hard to work with if it gets too soft.

if i may ask one more thing...if the dough is too sticky (even if chilled), do i use confectioners sugar or more flour to roll it out? thanks again. to help me roll it out, anyway.

Use a little flour, but not too much. Too much flour will make the cookies tough.

Sprinkle a bit of flour on your work surface and, using your hand, put a bit on your rolling pin, spreading it all around (it will look like a dusting of flour on the rolling pin).

Depending upon how many batches of dough you have to roll out, you will have to repeat this, but use the flour sparingly.

My favorite sugar cookie recipes instructs you to chill the dough for a few hours. I divide it before I chill it. If you do not chill it, it is far too sticky.

If you want to roll out and cut out, I applaud you. However, you can roll the chilled dough into a ball and flatten with a glass (flat bottom) dipped in sugar or roll the dough into a long roll in waxed paper or Saran wrap (when it is slightly chilled it is easy to make round) and cut into slices and bake as many as wanted. Enjoy your cookies!

zhills, i would if i could!! i've been asked to make star-shaped sugar cookies (with decoration) for a star-themed birthday party on sunday. i can bake a mean cake, but cookies are a new deal for me. i make rugelach with much the same rolling and slicing technique, instead of individually, and it is much easier, but this time i have to deliver as specified!!
