I made this for Valentines Day dinner, and it was really, really good! It is a Tyler Florence recipe.

Shrimp Scampi with Linguini

1 pound linguini

4 T. butter (divided--2T and 2T)

4 T. extra virgin olive oil (divided--2T and 2T)

2 shallots finely diced

2 cloves garlic minced

pinch of Red Pepper Flakes (optional)

1 pound raw shrimp--Peeled and deveined--I used frozen and thawed first

Salt and ground black pepper

1/2 cup white wine (I used reisling--thats what I had on hand!)

Juice of 1 lemon

1/4 cup finely chopped fresh parsley leaves

Cook pasta according to directions, drain, rinse and set aside

In a large skillet, melt 2 T of butter and 2 T of olive oil. Saute the shallots, garlic and red pepper flakes until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper, and ad them to the pan . Cook until they have turned pink...about 3 minutes. Remove the shrimp fromthe pan, set aside and cover with foil to keep warm. Add wine and lemon juice to the pan and bring to a boil. Add the remaining 2T of Butter and 2T of olive oil. When butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Serve immediately.

The only thing that I found was that 1 pound of pasta was too much. I used only about 3/4 of what I cooked.....strictly a personal choice.
