@3cupcakes wrote:@FUTURE Oh, my! I read your menu & now I'm starving! It looks wonderful. Tho I've never heard of or had of pimento cheese, but after seeing your recipe, I think I have been really missing out!
It it looks like something I need to make for super bowl watching! 😋
Enjoy your company!
@3cupcakes, honey, you haven't LIVED!! And you have to make your pimento cheese from scratch. Don't buy that store-bought stuff. It is NOT the same. Whipping it up yourself only takes 15 minutes. Then make a grilled pimento cheese and you can thank me later. Lol!!
@FUTURE I'm going to thank you right now because I'm so going to make this! 🙂

8 oz. sharp cheddar, shredded
4 oz. cream cheese
1/4 cup light mayonnaise
1 small jar (4 oz.) pimientos, drained and chopped
2 scallions, trimmed and sliced
1 tsp. garlic powder
Pinch of cayenne pepper
1 large baguette, cut into 40 1/4-inch slices
In bowl, combine cheddar, cream cheese and mayonnaise.
Beat with hand mixer on medium speed until blended and fairly smooth.
Stir in pimientos, scallions, garlic powder and cayenne.
Cover and refrigerate at least 1 hour or overnight.
Heat broiler to high. Place baguette slices on 2 small baking sheets.
Brush both sides with oil.
Toast under broiler (4 inches from heat) for 2 minutes. Flip over and broil another 1-2 minutes
Spread 1 heaping tablespoon pimiento cheese on each toast.
Looks so good! Thank you!

I looked online and found many recipes that seem very similar, if not identical..
Aside from those below, there are many others if you search using as key words green beans, bacon, pecans.

I love green beans with bacon and walnuts or pecans. Thank you for finding and sharing these recipes!

@PeterDM wrote:This is the best pimento cheese dip I've ever tasted. I've lived in the south for over a decade, so I've tasted a lot of different ones. Nothing compares to this:
Capital Bar and Grill's Pimento Cheese Recipe
Please serve the mashed potatoes! There's nothing wrong with having two starches when you're serving a large meal with several dishes.
That looks like a good recipe, @PeterDM. Thanks!!

My husband is a native Texan, and his favorite meal ever is chicken fried steak. I would not even move off the couch after all that - it's all pretty heavy. Fresh green beans with a little sautéed onions and crisp bacon pieces added would be good, in lieu of the corn. And, I would use some fresh vegetables for dipping in ranch dip along with your pimento cheese dip, in lieu of the salad with dinner. Your banana pudding would be lighter than cake too. Perfect desert for a heavier dinner. Y'all have fun now....

How about some fresh vegetables ... and something with not so much grease?
I'll do green beans instead of mashed potatoes. We eat health about 95% of the time, as do our friends, so I'm not concerned about this one meal clogging our arteries, and I know they aren't, either. When we do go out or eat at one another's homes, they are "treat meals", so I'll fix things we wouldn't normally eat and we will enjoy the meal and our time together! Thanks for your suggestion!

I do the same thing. We usually have healthy food at home, but that doesn't hold true for holidays and birthdays.
I don't go all out because there are just three of us, but I will fix recipes we don't normally have.
I follow two Southern food bloggers online, there's nothing healthy there. And I took the magazine Southern Living for YEARS. Vegetables do not seem to be a priority, lol.

Jars of pimientos are usually found in the same grocery aisle as jars of pickles.
I agree with that, but today I went to a new store, and they were in the canned vegetable section next to jars of mushrooms.
