Your dinner looks good to me!

 

If you ever want to try another recipe for Chicken Cacciatore, this one is very good, and it's not complicated.

 

Spicy Chicken Cacciatore

Bon Appetit  June 1999

Serves 4

 

4 bone-in chicken breast halves with skin; or 6 chicken thighs; or a combination

2 Tablespoons olive oil

1 large red bell pepper, diced

4 cloves garlic, chopped

1 teaspoon fennel seeds

1 teaspoon dried oregano

1/2 teaspoon dried crushed red pepper (*or 1/4 teaspoon - it's hot!)

1 (28 ounce) can diced tomatoes in juice

1/4 cup tomato paste

1/4 cup dry red wine (*Chianti is good)

1 Tablespoon balsamic vinegar 

 

1 pound spaghetti, freshly cooked; or angel hair or other pasta

 

Sprinkle chicken with salt and pepper. Heat oil in large skillet over medium-high heat. Add chicken, skin side down, and sauté until brown, about 5 minutes. Turn chicken over; sauté 5 minutes. Transfer chicken to plate.

 

Add bell pepper and next 4 ingredients to skillet; stir 2 minutes. Mix in tomatoes with juices, tomato paste, wine and vinegar. Return chicken to skillet; spoon some sauce over. Bring to boil. Cover, reduce heat to medium-low and simmer until chicken is cooked through, about 30 minutes. *Leave lid ajar to thicken sauce if needed.

 

Arrange spaghetti on large platter; top with chicken and sauce.

 

 *If chicken breasts are very large, cut in half crosswise.

I didn't know about "frying" the chicken.  I did it the way I learned.

 

Lightly season and flour chicken.  Fry for about 10 until seared on all sides (with skin on).

 

I added the chicken after I prepared the vegs & sauces.

 

I most likely won't make it again...wasn't my favorite even as a kid😉

I learned about this dish years ago from a cook book.  It was WAYYYYY before there was anything as computers for personal use.

 

Then, we didn't skin chicken at all before using.  My thought was "Why add that flour and fat from frying to a flavorful sauce?"  I'll save calories and make it heart healthy, so I did.Smiley Happy
