this is a good recipe  and it is easy

 

take the clean peeling sfrom your potatoes            and place them in a big pot.  add chicken broth and cream plus seasoning such as salt, pepper, onion as needed. simmer until tender and then puree and serve.  you can add ham or chicken as desired.

@shortbreadlover The peels are very nutritious, so I think this would be good. Maybe I would try nonfat Greek yogurt instead of the cream, although there is something to be said for cream. That being said, have you ever watched Mrs. Blatherwick make Army Soup on Nanny McPhee?

This sounds like something that could easily be made in a Vitamix.

Sounds good!  Just don't use peels with a green tint.

never thought about the green tint on the peels.  i think that added  spices would be good too. and yogurt is a great idea.  you are the best to make make such wonderful suggestions

I would not use skins that had "sprouted" either.  Soup sounds good!

i discovered that if you keep the peels in cold water overnight, you can make the soup the next day.  i might add some bacon and onion.
