ok---so how was your Easter dinner--good things--bad things??

Asked what was for dinner--now let's see how it turned out--

 

Mine turned out delicious!! All recipes were tried and true !!

 

Made----

stuffed flank steak

Scallops vera cruz over pasta

Fresh green beans with bacon/onions

Fresh rasp-blue-and straw berries with whip cream

 Hawaiian rolls

choc mousse too.

and even have some leftovers!!!

I made chicken breasts in chicken broth with spices and fresh organic portobello mushrooms, steamed organic asparagus, and baked Idaho potatoes with butter. Nothing extravagant or exotic, but it sure was satisfying. 

 

@wagirl - You went all out, and your dinner sounded fantastic!

Our's was fabulous!!!!  A few weeks ago hubby found a small lamb loin roast so we got it. He seasoned it, tied it back up and grilled it. Insanley tasty on the grill! Saturday he made a chickpea salad w/elbow mac, tomatoes, garlic, kalamata olives, feta (had this last summer, it's a good one). He also pickled red onion, made tzatziki, I made a few deviled eggs, and a few stuffed celery.

 

You know where this is leading - gyros!  Oh YES crazy delicious all of it!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

 

And yes leftovers to do it again tonight!

@wagirl  I was pleasantly surprised that everything turned out well, because I had no DD or DIL this year to help. DH stepped it up! Best hams I've ever made. Local spiral cut ham was the most tender and flavorful ever. I made sure to just heat them through for 2 hours at 275 and glaze for the last half hour. I'm tired of ham, but this was mmm, mmm, good.

 

Blueberry pie and pineapple upside down cake turned out great. And I made my own Dutch chocolate sauce and strawberry coulis to pass with the Costco cheesecake. DH said he could mainline the coulis, but he has to watch his sugar Smiley Sad

Spent the day in the hospital ER with DH.  We were planning on eating at restaurant on the gulf.  Didn't turn out that way.  Woman Sad

I tried a new mashed potato casserole recipe and everyone loved it, and that always feels good!  I used a ricer for the first time instead of my hand mixer.  They came out smooth and creamy.

@tends2dogs  I'm really sorry to hear that your Easter didn't turn out the way that you planned and that you spent time with your husband in the ER. That must be a stressful situation.  My thoughts and prayers are with you and your husband during this difficult time.  Heart
