Re: not all sour cream is the same

I have tried several different brands of sour cream over the years and always come back to Daisy!

@shortbreadlover  You're right not all sour cream is the same, I make my "sour cream" with cashews!  No label worries....

I make a non-dairy creamy herb dressing using raw cashews:

1 cup raw cashews

3/4 cup water

3 tbsps cider vinegar

1 1/4 tsp salt

1 tsp onion powder

1/2 tsp sugar

1/4 tsp garlic powder

2 tbsp minced chives

1 tbsp minced parsley

1/2 tsp pepper

Grind cashews in blender on low speed for 15 seconds.  Add water, vinegar, salt, onion and garlic powder, and sugar, then blend on low speed for 5 seconds.  Let sit for 15 minutes.

Blend on low speed for 1 minute.  Scrape down sides of jar and blend on high speed for 4 minutes.  Pour into bowl, cover, and chill in fridge for 45 minutes.  Stir in chives, parsley, and pepper.  Stir in water by tablespoons if thinner consistency is desired.

@deepwaterdotter

You apparently are using one of  the same recipes I've just  seen this afternoon in  my new issue of  Cooks Illustrated magazine for non-cream-based salad dressings that use  cashews and other types of substitutes.

There are some very interesting combinations.

I got this recipe from a lady that works in a booth at the local farmer's market.  Don't get that magazine, but might pick one up next time I'm shopping.

I didn't realize this, so thanks for the post. I only buy our local Prairie Farms (St. Louis area) or Daisy and know that both are 100% sour cream. In Iowa, I bought Anderson Erickson - another good product. It pays to check the labels.

I had no idea.  Thank you for posting.  I’m making chicken stroganoff tomorrow and will be sure to get the real deal.
