I think that vanilla pudding would work fine. I believe that the pudding is more for texture then taste.

I finally found the cake mix at a little independent grocery store here. I made the Butter Pecan version and my husband thought that the first one I made with Spice Cake mix, coconut pudding, dried cranberries and walnuts was better. I have to agree with him.

Thanks for the info reguarding using the spice cake mix. I have several spice cake mixes in my cabinet and I am definitely going to try that ! You are right -the butter pecan is not that eazy to find! I like the cranberries and walnuts combination , It sounds good!!!
