I have a similar recipe, but it calls for a 3 oz. pkg. of vanilla pudding in the cake recipe in addition to the other ingredients.

The frosting is 1 3oz. Pkg. vanilla pudding, 1 20 oz. can of crushed pinapple + juice and 1 9 oz. container of cool whip. My recipe doesn't call for cream cheese.

Top the cake cake with coconut, it is delicious.

I used to make the frosting recipe you're talking about.

I recommend to use 1c. store-bought orange juice in place of the can of oranges because I can't really taste them.

@TTerri  Some grated orange zest added to the batter would likely increase the orange flavor as well.

Re: mary nelsons memaw....mandarin orange cake

Thank you all for these wonderful suggestions.  I need a cake for my Monday class and I have been looking at orange recipes all day.  I think this would be perfect.

The next time that I hear salt and ice together, it better be in a margarita!

Sounds really good, I would make that for a picnic in the summer.
