I do the same, make it the day before and refrigerate.  Then half gets stuffed into the turkey and the rest baked in a casserole dish.  I don't see any issues with it being unsafe to eat.  And I use a bunch of eggs in mine!

This year I am going to try Stove Top dressing. I cut up the onion and celery tonight and it is in the refrig. Tomorrow morning I will put the dressing together and bake it in the oven and will heat it up in the micro before eating. I hope it will taste okay, I've never made it  like this.  I am making a simpler menu this year..
