a big thumbs up. dh can no longer have potatoes, as they give him kidney stones. (very unplesant) so i had some oven roasted cauli, and decided to make faux-tato salad with it.
mixed mayo with sour cream, (lightens it up IMO), sliced hard boiled eggs, chopped bread and butter pickles, (family's fav) little dijon, galic powder, s/p and let it sit overnight.
what a hit!!! will be making it again.
great for you low carbers

It’s the high protein causing kidney stones.
Eggs, mayo, sour cream....even salt will cause kidney stones.
Not the potato.
Might want to read up on this for his best interest.

@sidsmom actually have done alot of reading on this, and believe it or not, the recommendation by a urologist is for a diet low in oxalates Horrid diet in many ways. plant based diet is a no no. also no whole grains, or leafy greens, nuts, long list.
the biggest no was the potatoe.

@kittyloo Your new take on potato salad sounds really good. May try this myself.
It must really difficult to prepare meals for both you & DH. Much of the good things for all of us to eat he struggles with or simply can't at all. I wish you both well.

A low-carb faux "potato" salad made with cauliflower instead of potatoes, perfect for Keto or if you're just looking to eat less carbs.
Ingredients
Steam cauliflower for few minutes until tender first.
1 pound cauliflower florets (chopped into 1/2 inch pieces) Kosher salt
1/2 cup olive oil mayonnaise (I love Sir Kensington)
1 teaspoon yellow mustard
1 1⁄2 teaspoon fresh dill
Freshly ground black pepper (to taste) 1/4 cup finely chopped dill pickle
1 medium celery stalk (finely chopped) 1/4 cup chopped red onions
1 tablespoon pickle juice
6 hard boiled eggs (sliced)
paprika (for garnish)

@BLH yes, nuts are on the no-no high oxalate list as well. fortunately, dh, has been able to eat some nuts, even tho i always give him the frownie face. have you read the high oxalate list?? you'd be shocked. everything that you thought would be healthy eating, is a big fat NO.
