low sugar ice cream recipes?

I want to make some ice cream in my new Kitchenaid ice cream maker attachment but I need to make it low in sugar.

I have some Splenda half sugar/half Splenda blend. has anyone here ever made ice cream using this as a substitute?

anyone have any good low sugar ice cream recipes to share?

I have no idea how the Kitchenaid gadget works but I have an electric ice cream maker of the type where you freeze the bowl.  I simply take a pint of low fat plain or vanilla yogurt, Splenda to taste and cut fruit of choice.  My favorite is mango chunks.  I combine and process in my ice cream maker until frozen.  It's delicious, quick and simple.

I have the Kitchenaid Ice Cream maker and have made a variety of ice creams in it.  All of mine are custard based (where you cook the eggs, etc. first).  I do not use fake sugars of any type as I don't like the taste and aftertaste of them, so I can't speak to that.


However, when you make a soft serve custard, it's served at a lower temperature than rock solid ice cream, so it's going to taste sweeter and saltier as a result.  Therefore,  you can get awway with using less sugar overall.

@Nightowlz, yes, the links did help a lot. there are a lot more options than I thought. also, I never thought about using almond milk so that was interesting. I appreciate the links.

Almond Milk and Coconut Milk are options that will also allow you to use less sugar as those are sweeter milks.

Here's a basic recipe I use for my Cuisinart Ice Cream Maker (freezer bowl type), @MariotaMurielle.  Just add different flavorings/nuts/fruits for a variety.  Tried and true.Woman Wink

 

BASIC SUGAR-FREE LOW CARB ICE CREAM RECIPE

 

1 1/2 cup heavy cream

1 1/2 cup cold water

20 drops liquid sucralose (or equivalent sugar substitute)  to equal 1 c. sugar.  Flavored syrups i.e. Torani, can be used as well (1 cup).

1/8 tsp. salt'

1 tsp. flavoring of choice

1 tsp. vanilla extract

1/4 tsp. xanthan gum

3 T Lecethin Granules (or 3 egg yolks for a custard version)

2 T Vegetable Glycerine

 

Optional: 1/3 cup fruit, nuts, chocolate morsels, etc. which go in during the ice cream maker cycle.

 

The Lecethin Granules, Vegetable Glycerine, Xanthan Gum are available at health food stores (or Netrition.com and Amazon online).

 

Also, ice cream made at home can freeze more solid than commercial types so just put it in the microwave for 20-30 seconds to make it scoopable.
