I have really been on a kale chip kick lately, making them about twice a week. I make mine just like happy housewife does, only I add some garlic/herb seasoning and a little salt which really adds to the taste. I gave up potato chips years ago, but actually like these better.

Kale Chips are great. Let them cool a bit or you will get burned!I don't know about eating as many as you want but it's easy to do and it's so good for you! I'd remove any thick stem pieces as well. It may need more oil than 1 T? I see huge bags of kale. Kale is great in soups also...
