I would go with a 'build your own' type thing so people can choose what/how much of xxx they want. Baked potatoes (chili, broccoli, cheese, etc), tacos or taco salad, hawaiian haystacks, etc. The dessert is where I'd add the cajun or pnw flare.

My go to company meal is smothered steak which slow cooks in the oven for two hours. That gives time to clean the kitchen from chicken frying the steak. The sides are mashed potatoes, macaroni and cheese, and green beans. (You can substitute brisket or pork roast if you don't want the mess of preparing the smothered steak.)
Serve with cornbread and coconut or chocolate pie.

My go to for company is pork tenderloin, mashed potatoes and green beans with butter and toasted sliced almonds. I brown the pork and then finish in the oven. After taking out of pan let rest on a plate. Using the same pan as you cooked the pork in, put in some white wine and cook down a little, add chicken broth and finish with a pat of butter.

@kittyloo The suggestion of asking about dietary restrictions is an excellent one but if you choose not to I suggest a chicken dish. So many folks no longer eat red meat and there are so many easy and delicious recipes.

If you like meatloaf and want to "dress it up" for company, so can make a meatloaf Wellington. I have made this a lot in the past. Just bake your regular meatloaf for about 45 minutes and then make biscuit dough and roll it out to a rectangle and wrap the meatloaf in it. I wrap it like a package and then brush egg wash on top and sprinkle on some poppy or sesame seeds. You can use leftover dough scraps to make decoration for the top if so desired. Bake it for another 20-30 minutes until the biscuit covering is browned. I usually turn the oven up from the 350 to 375 or 400 after the dough is on. It is really good served with some muchroom gravy. It looks really pretty and is certainly something that can be served to company.
If you want to be extra fancy, you can saute minced mushrooms and spread on top of the meatloaf before covering it with the dough. But believe me, it is just fine without it Easier and less messy too.

I too would go with something not Cajun or Creole at first.
This is my go-to chicken dish for people eating with us. So far everyone has been happy!
You could also make a dish common to your previous area. I don't know anything about the PNW, but I've heard it's beautiful! ![]()

That is such a nice idea to invite and have them get to know you and you them.
Well, before I was a vegetarian, my favorite thing was meatloaf, mashed potatoes and green beans. I don't think you can go wrong with that!
Then for dessert, brownies with ice cream or a wonderful chocolate cake, strawberry shortcake, or lemon bars, key lime pie.
ok, I'm coming over! Add 1 more lol!
Oh and for appetizers maybe hummus and or bluecheese, ranch etc dressing and crackers, vegetables, cheeses if you want-always simple to make.

Maybe Salmon? Fish for them and easy to eat for you.
I like the roast chicken idea too.
