Does anyone have easy and good recipes using a clay pot/roaster?  I'm especially interested in anything that is not chicken.  Thanks!

Let me recommend the Clay-Pot Cookbook by Georgia Sales being sold on Amazon for $0.01.  I have this book although I haven't looked at it for ages.  If you have a particular dish in mind, I'll be happy to copy it for you.

I have 3 clay pots in various sizes. Love them. Bought the biggest size so I could cook a turkey in it.

After you soak it in water for  about 15 min. so it can absorb water, you can put anything in it and bake it at 400 degrees. It has to be that hot so it can draw the water out of the  pot. This makes everything moist. My favorite thing to do in it is but a beef chuck roast or stew meat in the pot, add cut up potatoes, celery and carrots, cover it and it is done in a short time. Healthy meal.

...dont forget youtube, hope this helps, i love them, have one just for veggies, I keep a devoted/clean 5 gallon bucket to soak lid and bottom in, that way it can be moved as it soaks, doesnt lock up the sink-etc, sometime I use warm water to speed it up.
