Does anyone have an easy recipe for vegetable chow mein ?

I have found some great, easy Chow Mein recipes on Pinterest. My husband and I love a good Chow Mein and with the whole Covid restrictions for restaurants, we do a lot of experimenting with Pinterest recipes.😊

This one is from Betty Crocker.

 

1/4 cup veg. oil

1 tsp. salt

1/4 tsp pepper

2 cups sliced chinese cabbage

3 cups thinly sliced celery

1 can (1 lb.) bean sprouts

1 can (4 oz) water chestnuts, sliced

2 tsp. sugar

2 cups chicken broth

2 1/2 TBSP cornstarch

1/4 cup water

1/4 cup soy sauce

2 cups cooked chicken, pork or veal, sliced

crunchy chow mein noodles

 

Heat oil salt and pepper in deep skillet.  Add cabbage, celery, bean sprouts, water chestnuts and sugar.  Stir in chicken broth; cook about 10 min.  Mix cornstarch, water and soy sauce; add to vegetable mixture.  Stir till thickens.  Add meat and heat through.

4 servings

 

I also add bok choy and sometimes onions and carrots.  Just eliminate the meat.

Sounds good minus the meat,I would add onions too.thank you.
