Boy did I make a wonderful chopped salad for dinner last night! Got the newest quarterly Delish magazine and followed a recipe from it----and added to it--but was fresh and crunchy and very filling. Made a beautiful vinegrette too. Put in the bits and pieces of previous dinners. Grilled up a chicken breast. Got a nice fresh baked baguette and toasted that up---delish!!!

Saw Geoffrey Zakarian on The Kitchen, with a smashed cucumber with tiny diced radish and chili crisp recipe, will be making it tomorrow.

 

He had other ingredients in it like fennel and nuts but I'll make it simpler.

Would you mind sharing the recipe? I went to Delish website, but they have a bunch of salad recipes! In two weeks, out of town guests will be here for my sister's Celebration of Life. Trying to figure out what to have while they are here.  Thanks!

@coconut1818-- OK--so this recipe is called California Pizza Kitchen Italian chopped salad---came from this Delish issue that has copycat recipes for the various faves from various places.  I don't have one of those restaurants around where I live but it is just your basic recipe. So try searching for that specific one---

Thank you for the kind words. She was married for 54 years to her high school sweetheart. He passed away two years before she did. I miss them so much, but they are together again, healthy and pain free. That brings me comfort.

@coconut1818   I typed in Delish copycat recipe for California Pizza Kitchen Italian chopped salad and got it. 

 

My deepest sympathy on the loss of your dear sister. I lost my sister in 2008 and I still miss her. Hopefully the celebration of her life will bring you peace and comfort.
