This week some one posted a recipe, using thighs ,Dijon mustard i think,don't remember who,looking for it.

When you lose some one you L~O~V~E, that Memory of them, becomes a TREASURE.

Hi @goldensrbest ,

 

I remember seeing a recipe using chicken thighs but it was with honey and soy sauce and ketchup and other ingredients.

 

Anyway, it was posted in the Kitchen Forum in the Do You Like Honey thread by member IWantCoffee.

 There is also this one 

 

Artichoke Chicken

4 Breast or Thighs  

Butter and Olive oil Paprika
Salt and Pepper

 

1 12 oz jar Marinated Artichokes, drained

8 oz Fresh Mushrooms, sliced **

 

2 Tablespoons of Flour

½ C Chicken Broth

Dash Rosemary (crushed or dried)

Use the paprika, salt/pepper to coat the chicken and brown in the olive oil/butter combination.

After chicken is browned, put it in a casserole, single layer
.

Fill in around the chicken with the marinated artichokes.  

 

**Saute the mushrooms in the pan you used to brown the chicken.  

Then sprinkle the 2 Tablespoons of flour over the mushrooms and stir, add the chicken broth, stirring until smooth. 

Pour mushroom mixture over the chicken.

Cover with foil and bake for 35-40 minutes @ 375 degrees.

 

**  I used canned mushrooms!  Still Good!

 

Next ingredient starts with a B.  Or your choice.

If anyone wants a delish recipe for chicken thighs -- bone-in or boneless, or even boneless breasts try this.  I found it on a jar of Hellman's Mayo.  Sorry for not listing exact amounts, but I've made it so often, I don't have the actual recipe anymore.

 

4-6 boneless or bone-in chicken thighs

4(?) boneless chicken breasts

 

Coat chicken with mayo, dredge in Italian or Panko style breadcrumbs. *

 

Preheat oven to 375, cook 45 minutes.

 

When I made them Sunday, I used Stove Top Stuffing Mix, crush them and coated the chicken with that.  Unused crumbs can be stored for future use.

@vermint Chicken breasts have skin removed.  When I first made thighs, I did not remove the skin.  When I made them Sunday, I removed the skin and they were just as good if not better with the skin on.  They were juicy not one bit dry.  That's how I will make them (skinless) in the future. Hope you try them and report back.

Here's a chicken thigh recipe we eat with rice that we like. It's so easy to make. Enjoy

 

Bourbon Chicken

2 lbs boneless skinless chicken thighs cut into bite size pieces

1 garlic clove, crushed

¼ t ginger

3/4 t crushed red pepper flakes

¼ c apple juice

1/3 c light brown sugar

2 T ketchup

1 T apple cider vinegar

½ c water

1/3 c soy sauce

1 T cornstarch (if thick sauce is desired)

Mix all ingredients except for chicken, in a bowl. Put chicken and mixture in a large pan and bring to boil. Reduce heat to medium & simmer for 20 mins.
