I' ve been making chia seed pudding lately. Made pumpkin that was good and now I did a chocolate one that is really yummy. Have been researching chia--kind of, and it seems to be a pretty healthy little seed. I make it with almond milk as DD can't eat dairy. She eats that in her lunch and adds yogurt and nuts to it. I use maple syrup to sweeten. Chia has the texture like tapioca when it re hydrates, but with a crunch. Kind of fills you up. Was thinking about using coconut milk next-----

My stomach could not tolerate Chia, my hubby uses it as part of his breakfast

Sorry, never had chia pudding.

 

I'll stick to my rice pudding, just got some cups over the weekend.

 

I know not as healthy but it's my treat, so good.

I add a little bit to my oatmeal every day.

Have never had chia seed and have always wondered about adding it to my cooking. Have to do a bit more research.  Thanks for the post and ideas!

The place where I work uses coconut milk based chia pudding in a parfait & tops it with sliced, fresh strawberries.
