butternut squash--my new fave

I have NO idea why I have never done anything using butternut squash! I got a couple small ones from a local farm that is nearby and cut them up with a carrot, onion and some garlic then roasted it all on my Ninja outdoor grill---and then made soup!! It was amazing!! tThink I will roast more up and do a maple syrup glaze to take to T-day this year!! Woman Very Happy

I always make a big batch of butternut squash and then blend the leftovers with chicken broth and make soup. Try mixing in some chili powder, yum !

My grandmother made wonderful dishes with squash. She cooked with acorn, butternut, & spaghetti squash. Sometimes she made soup or sometimes cut them in half & added butter & salt or brown sugar to bake them. When my child was young, I grew butternut squash in our garden; there were so many that I donated almost 50 to the local food pantry. They're not easy to cut, so many grocers carry pre-cut butternut squash.

I ate the best Butternut Squash soup in Los Angeles at a restaurant called Fresh Corn Grill. I would enjoy a big bowl today!

When I bake a butternut or spaghetti squash, I pierce it with a fork a few times and

microwave for 3 minutes. Otherwise I find it almost impossible to cut.

@piperbay  I never thought of doing that. Does it cook in only 3 minutes, or do you then cut it and finish cooking in oven or microwave? In a pan with water or just dry?

 

  I have never baked butternut squash, only acorn squash and spaghetti squash. I bake them whole for over an hour, since I have arthritis in my hands and can't cut them before baking.

 

 I have to have butternut already peeled and cut and then cook on stove top.

I think you can buy the butternut frozen and that it is all ready cut into chunks, all ready to use.

I like it to.  Wanted to try it for the longest time and finally did this year.  I usually just toss in olive oil, season and roast in the oven.  Ina Garten has a recipe for a salad the calls for roasted butternut squash (with a drizzle of maple syrup).  I'm going to try that someday.

@Desert Lily ---I am a huge squash lover anyway---but that butternut soup was so good. My other fave is Delicata squash that I split and clean and bake with butter and brown sugar in it--amazing. I do like spaghetti squash too --with butter and parm cheese or red sauce---I grew up with that nasty frozen block of mystery orange squash that my mom cooked--YUKKK!!! Woman Indifferent at the farm I went to, they had a white one tht looked like an acorn squash but it was called a  mashed potatoe squash---have you ever heard of that?
