Made this yesterday--and wow, was it good!! This type of recipe uses no eggs, butter, or milk --was a depression era  recipe--- it turned out delicious and soft and very moist. My Gram made one in choc that is to die for. I made that one as my kids b-day cakes. This time, instead of the 1 cup of water called for, I did use almond milk. Made it a little richer I think. I added choc chips to the top. There are all sorts of recipes for wacky cakes--am thinking about doing a pumpkin one. You can make an icing or frosting to go on top too.

@wagirl Yes I would also love the recipe!  It sounds like something I could make for my daughter & her husband who are both vegan.

I've done the chocolate and it was delicious. I will definitely try the banana, thanks for the tip !

Those cakes are great for a two person household. I made a dozen banana muffins this morning.

I use this website quite often and it has many recipes for these cakes---sweet-little-bluebird dot com. Of course it is all one word----

@wagirl Thank you for that website! Heart I briefly checked it out just now and was amazed at all the variations of this cake that look scrumptious! Plus, I am always on the lookout for a great banana cake with banana frosting, so I've bookmarked it for that particular cake recipe as well. They certainly do have a lot of other tasty looking recipes as wellHeart

Ditto with THANKS @wagirl ..... great website!  I will be going back to it when I have more time.  I saw so many good recipes.  I appreciate the crazy cake recipes as I have a son with a dairy allergy.

@cindyNC I found this recipe online.  I plan on making a vegan version and will add some chocolate chips which is not in the recipe.

 

 

Vegan Banana Wacky Cakes

 

This recipe is a delicious and moist vegan banana wacky cake that’s perfect for satisfying your sweet tooth. It’s easy to make and requires just a few ingredients.

Ingredients:

  • 1 1/2 cups all-purpose flour 🌾
  • 1 cup granulated sugar 🍮
  • 1 teaspoon baking soda ⚗️
  • 1/2 teaspoon salt 💸
  • 1/4 teaspoon ground cinnamon ❀️
  • 1/2 cup mashed ripe bananas 🍌
  • 1/2 cup water 💧
  • 1/4 cup canola oil 💧
  • 1 teaspoon vanilla extract 🌿
  • 1 tablespoon apple cider vinegar 🍎

Instructions:

  • Preheat your oven to 350°F (180°C). Prepare an 8-inch square baking pan with non-stick cooking spray.
  • In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
  • Make three depressions in the dry ingredients. Pour the vinegar in one depression, the vanilla extract in another, and the oil in the third.
  • Add the mashed bananas and water to the bowl. Mix the batter well until smooth.
  • Pour the batter into the prepared baking pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool on a wire rack.

Tips:

  • Use very ripe bananas for the best flavor.
  • Don’t overmix the batter, as this can result in a dense cake.
  • If you want a moist and fluffy cake, don’t overbake it.
  • You can top the cake with your favorite frosting or glaze, or simply dust it with powdered sugar.

@wagirl Thanks so much!  I have not heard of this site before and will bookmark it....looks like some nice & easy recipes.
