Hi Soushi, I made this the other night, and we both liked it. Next time I'm going to try it with ground turkey seasoned with greek seasoning instead of beef.

Thank you, winamac1, for suggesting actual food items, not just someone's books. I love orange roughy baked with lemon, a bit of butter, and spinach. Have it infrequently, though, due to mercury content of the fish.

Hi Seaside! Stay away from Swordfish, tile and mackerel if you are concerned with mercury. I just checked..you're right...orange roughy is high. Cod has a low amount of mercury as does sole and other mild fish. I don't think shrimp is too high in mercury either. I just prefer eating the fish or chicken plain and not in recipes. I like it with seasonings and a tad of olive oil!

The two cookbooks I ordered from George Stella's collection came yesterday. I curled up in bed and started reading them after dinner. The recipes sure look wonderful. I am now ordering the cook book he sold here on qcv. I have little GiGs each month on my home fusion broadband but watched one of his shows on youtube.

This is one of my favorite go to meals.

In a 13 x 9 pan lay out in a single layer frozen chicken tenders (they can be bought in bag in the frozen chicken section) add to your liking: Italian seasoning, black pepper, salt (I use sea salt) and dry minced garlic (fresh is fine too). Add enough water to cover.

Bake 20-25 mins (longer if the tenders are large) 420°F. I leave it in the oven to keep warm if I'm still getting other things together. Just turn the oven off. Remove chicken from water to plate. There will be fat floating in the water, just throw it away.

In a blender process 2 large or 4 medium cored tomatoes (it will be a salmon pink color). Add this to a warm pan with some olive oil. Add to your liking Italian seasoning and minced garlic. This part is a MUST. Cover with a splatter guard. Let simmer over a low medium until bright red and reduced to your liking, stirring frequently. Salt once ready to serve. Feel free to add sautéed vegetables, too! I like to sauté onions to almost caramelized or slightly browned zucchini. I'm sure sautéed mushrooms or browned ground turkey would rock in it too.

I normally make a bed of lettuce in my plate and place a piece of chicken on it and a ladle of sauce over it. It's also good served with broccoli or zucchini. I plan to get a spiralizer this summer to make zucchini "pasta".

****If you like Italian dressing, place the drained chicken in a bowl and use scissors to chop it up. Add a splash of dressing to it while the chicken is still warm. This is great to make a salad with. Just a tip: if using bottled, don't shake it before using. Instead, hold it over the sink and gently squeeze the bottle to remove the liquid. It just "waters down" the salad and adds empty flavorless calories. Plus it's easier to use as a marinade now.

If you have a NuWave, place the frozen tenders on the 3" high rack and spoon some drained Italian dressing over. Cook for 9 mins. Flip the chicken over and spoon some more dressing on this side. Cook for 9 mins. I serve with steamed broccoli with shredded cheddar cheese on top, and sweet nibblet corn topped with a little real butter (Land o'Lakes whipped is pasteurized cream and salt. It's 50 cals per TBSP vs 100 of non-whipped), and salt & pepper.

Bacon/Seafood Kabobs

Fresh Scallops, Shrimp

Thick cut bacon, I like maple flavor

Smuckers Sugar free orange marmalade

Pour marmalade in a sauce pan with 3 T water, stir while heating, set aside.

Meanwhile;

Thread on bottom end of a piece of bacon a skewer, add scallops and shrimp alternating.

Once skewer is filled wrap the bacon around the seafood like a barber pole and hook end on tip of the other end of the skewer.

Grill skewers on barbeque till bacon is almost done, Brush marmalade on bacon liberally and cook till done.

I made these for DH's birthday and have made them for parties. They are were a hit.

That's pretty much what I do: lean protein + lots of veggies. Eliminate rice, potatoes, bread, etc.

Instead of sandwiches, try lettuce wraps. You can fill romaine lettuce leaves with anything: taco filling, tuna, lunch meats, cheeseburgers, etc. You can also use sliced cucumbers to make sandwiches instead of bread, either little round mini-sandwiches or cut them lengthwise, scoop out the seeds, and make "boats" filled with tuna or egg salad or lunch meat.

Use spaghetti squash instead of pasta. Just bake it, scoop out the insides, and put your favorite pasta sauce on it.

Also go for soups, just omit the pasta, potatoes, or rice. You can substitute cauliflower for potatoes in things like chowders.

Here's a recipe we like:

CRAB-STUFFED PORTOBELLO MUSHROOMS

Ingredients

4 large Portobello mushrooms

1 can crab meat
3 spring onions, thinly sliced
1 small stick of celery, finely diced
butter
1/8 tsp. thyme
1/8 tsp. oregano
1/8 tsp. Old Bay Seasoning

black pepper
3 + 2 Tbsp grated Parmigiano cheese
4 Tbsp mayonnaise
1 tsp lemon juice
2 Tbsp fresh parsley, finely chopped
paprika

Directions:

Pre-heat the oven to 350F.

Wipe the mushrooms with some damp kitchen towel to remove any dirt. Using a very sharp knife, cut off the mushroom stems and some of the gills to make a hollow in the center of each mushroom. Finely chop the stems and gills and reserve for later.

Heat the butter in a frying pan and add the spring onions and celery. Sautée gently for 3 or 4 minutes, until the celery just begins to soften. Add the chopped mushroom stems and gills and cook for another minute or so, then remove from the heat.

In a separate bowl, shred the lumps of crab meat, then add the thyme, oregano, Old Bay and pepper and mix well. Add the contents of the frying pan, mayonnaise, lemon juice, parsley and 3 Tbsp of Parmigiano and mix well. Spoon a quarter of the crabmeat mixture into each of the Portobello mushrooms. Top with the remaining Parmigiano and sprinkle each mushroom with a little paprika. (If making in advance, you can cover the mushrooms with saran wrap at this point and refrigerate until needed.)

Cover a baking tray with aluminium foil and brush with a little olive oil. Place the mushrooms (topping side up) on the foil and bake for 15 minutes. Turn the grill on for the last few minutes to melt the cheese topping. Serve hot.

Num-Num! That sounds delicious. Thanks for sharing this recipe. I will probably use the smaller mushrooms that they have at Costco to make this dish to make it look like the stuffed mushrooms a local restaurant serves.
