i used whole milk with butter melted in. there has to be a certain percentage of  butterfat (the whole whipping cream) for the ganache.  i also see a recipe for usin sweetened condensed cream. 

  turned out ok.

She has LOTS of cheesecake recipes and very good instructions.

 

I make tons of them...kinda my signature dessert.

 

I follow her exact instructions.

 

She has never let me down!  LOL

 

 

I always unwrap my Philly cr cheese (the only brand I will use and full fat)

and leave open on the counter for hours!

It is totally room temp and then some.

 

I also cream it on the slowest setting with my KA (she suggests this in her recipes) and eggs are def added ONE at a time and throughly mixed.  I have never had lumps.
