Saturday I decided to do something different with my Zucchini.  I washed it, (skin on) cut off both ends and put it thru my food processor with the blade that shreds.  Put a little olive oil in my non stick sauté pan, added shredded zucchini and a little salt and pepper.  Tossed it a couple of times and when it was softer and hot I took it out of my pan.  Took about 2 minutes.  I loved it. My son tried it and said that it was good also. I shredded Two Zucchinis and put the rest in my lock & lock.  Thought I would share.

I make it that way often.  Also good with a few red pepper seeds, & lemon juice at end. I think Julia Child suggested this method.

I do this too, but I salt the shredded zucchini liberally while in a colander first to release much of the water, then cook as you did and add grated or shredded cheese at the end of cooking.

I love zucchini..... I wash it really well and with the skin still on I cut it into cubes .... put olive oil in pan with the zucchini & cook it until it is lightly browned ....then drain any excess oil from the pan..... scramble a few eggs ( depending on how much zucchini you have) & add Italian grating cheese, salt & pepper to taste to the scrambled eggs .... put the zucchini back in the heated pan & pour the egg mixture over the zucchini & cook until done ..... if you have some Italian bread you can make a delicious sandwich..... enjoy!!!!

I do the same but season with Italian seasoning and put fresh grated parmisan on it.
