Zucchini Dressing

Zucchini Dressing

1 lb zucchini (cut up into ½ inch chunks) do not peel (about 1 medium sized zucchini)
1 small onion chopped ( about ½ cup)
1 ½ cups cracker crumbs (Ritz or saltines)
1 stick of butter (I use less)
1 egg, beaten
½ tsp. salt
¼ tsp. pepper
½ cup cheddar cheese, grated (or my brother uses Velveeta)

Mix together and put in a greased baking dish (about 2 qt.) Bake 1 hour or longer at 350.
