Zucchini Cupcakes

3 eggs

1 1/2 cups sugar

1/2 cup oil

1/2 cup orange juice

1 teaspoon almond extract

2 1/2 cups flour

2 teaspoons cinnamon

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon ground cloves

1 1/2 cups zucchini...grated

Frosting:

1 cup brown sugar

1/2 cup butter

1/4 cup milk

1 teaspoon vanilla

1 1/2 - 2 cups powdered sugar

chopped nuts (optional)

In bowl, beat eggs. Add sugar, oil, orange juice and extract. Combine dry ingredients and nuts.. Add to egg mixture and mix well. Add zucchini and mix well. Fill greased or paper lined muffin cups. Fill 2/3 full. Bake at 350* 20 - 25 minutes. Cool at least 10 minutes before removing from pan. FROSTING: Combine brown sugar, butter and milk in a saucepan. Bring to a boil over medium heat. Cook 2 minutes stirring often. Remove from heat and add vanilla. Cool. Gradually beat in powdered sugar. Frost cupcakes.
