Zucchini Bread Pudding

4 cups day old zucchini bread...cut into 1 inch cubes

1 cup milk

3 egg whites

1 whole egg

1 teaspoon sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

3 Tablespoons brown sugar

2 Tablespoons butter

Mix together milk, egg whites, whole egg, sugar, cinnamon and nutmeg. Pour over bread cubes. Push bread cubes around making sure they are well coated. Allow bread to soak in refrigerator 1 - 2 hours. Most of the liquid will be absorbed. Pour in a greased baking dish. Mix the brown sugar and the butter together and put on top. Place baking dish in a larger pan with about an inch of water in it. Bake at 350* for 50-60 minutes. Sprinkle with powdered sugar.

We never have left over zucchini bread, but in case we ever do, I'm saving this. Thanks!

LBM...what a wonderful idea...I have copied this and will be making it with a Chocolate Z bread that I have some leftovers of...Again thank you for all of your wonderful recipes...I do have many of them and use many of them all of the time..Tess

Oh thank you! Bread pudding is one of our all time favorites! Would NEVER have thought to make it out of zuc bread!

I wish those varmints had not eaten my z plants this year! It just goes against my grain to have to buy it! LOL Usually you don't know what to do with it all!
