Zo Bread Machine Dough Cycle Question

I make hamburger buns with the KAF recipe for "Beautiful Burger Buns", using the Zo dough cycle. 

 

The recipe says to use different amounts of water for summer & winter. If it's in the Zo machine environment, does that still apply? Yesterday I used the full 1 cup stated for winter months, & it was sticky. 

 

I've been experimenting with the amounts, but what are the general rules?

 

Btw, this recipe is so delicious, & extremely forgiving. The buns are soft on the inside, yet strong enough to hold a juicy burger.

 

SO GOOD! In fact, you don't even need the meat....just brush on some melted butter.  Smiley Very Happy

Been baking bread for 70 years. I also have a Zoe machine, but really prefer making it by hand.I went to Google and got the recipe. you are talking about, It sounds like you are using too much water, however to mess with it, wet your hands. I just made a loaf of bread that the blue jean chef put on her blog the other day, it is an artisan bread, but so good. I"ve made it twice now. It too is very sticky, you make it in a casserole pot. It is really a crusty bread. I love making different kinds of bread, so will try these buns, Thank you

I'd LOVE to stand next to you & watch you make bread. My mom made lots of bread & rolls (loved her Parkerhouse rolls!) 

 

I totally understand doing it all by hand...I've done it, & it's better. But doing the mixing & first rise is so easy in the Zo. I use it when I don't want to be in the kitchen for hours. 

 

Maybe the seasonal water amount stays as written in the recipe, even if I use the Basic Dough Cycle. Yes, I had a little too much water in my last batch. 

 

There's nothing better than homemade bread....now that's LOVE. Heart

I have made the hamburger bun recipe from KAF a few times.  They have always turned out well for me.  I have the pans to bake them in too.

 

I do not have a bread machine, so I have to knead by hand.  I always put the smaller amount of water in the mixture and add more if needed.  Making bread and other yeast dough requires a feel for when it is right.  

 

It should not be too sticky or too stiff.  If sticky, add more flour and knead until the dough is elastic and smooth. If stiff, add more water.
