The crust is the most flaky you will ever taste!  Friends have used it for mini pies!

 

 

Chicken Pan Pie

 

6 chicken breasts  (Or meat from a rotisserie chicken and use chicken broth)

32 oz Chicken broth from stewing

1 can Cream Of Chicken soup

2 tsp  salt

2 large ribs celery, chopped

5 carrots, thinly sliced

1 medium onion, chopped

1 cup frozen small green peas, thawed 

 

1/2 stick butter

1/3 C plain flour

 

Cook chicken breasts gently to retain liquid with celery, carrots, and peas in salted chicken broth removing scum.  

Cool chicken enough to break into bite sized pieces, return to broth.

 

Melt margarine in pan.

Stir in flour and chicken soup.

Gradually add to hot vegetable mixture.

Pour into greased 9 x 13 casserole

 

Crust

 

2 C flour

1 tsp salt

1/2 C oil

1/4 C milk

 

Mix in small bowl.

Roll out between two pieces of waxed paper, the size of your casserole.

 

Place dough side down over casserole and peel off top sheet of waxed paper. 

Cut crust to vent.

 

Bake 400 degrees for 30 minutes.

@Chi-town girl It would only be a 9 x 13 covered with cooked crust.    It's the best one I've ever had.  Don't skimp on the broth.Smiley Happy

@LizzieInSRQ It takes a few steps, but you certainly can taste it.   I have tasted other chicken pot pies in my Advanced Foods labs .  I ran 5 kitchens with 30 students for 37 years.  I've tasted a lot.  This is kickin'!

You could mix everything up the evening before, store in a bowl over night.  

 

The next evening put in a buttered 9 x 13, slap the crust on, vent and bake covered at 350 for 30 minutes, remove the foil off of the crust and bake about 20-30 minutes.

I love casseroles and pot pies! I tend to only make them if company will be eating as  I would overindulge as a single person, they sound so yummy.  Sweet of you both to  post these today. 

I was not  being sarcastic when I said "super simple". 

 

One question...do you saute the onions first and then the other veg and then add the broth and chicken 

 

37 years x 30 students, yeah I think you've had a lot of cooking experience!!

No, I didn't sautee the onions first.

 

The area I loved so much was the clothing design and Interior Design.  My eyes have always put combinations together since I was about 5 or 6.

@ECBG   Just to illustrate a point...this would be a great pressure cooker recipe.  Your could have the chicken and veggies done in about 25 min cooking time.

Use what you love.  I would be doing other things in between.  I need elves to do all of the cutting.........
