A dear friend passed this recipe along to me.
Yummy Chicken Dinner
4 medium size ears of corn
2 medium zucchini
4 large plum tomatoes
4 medium size chicken breast halves, skin on and bone in
1/2 tsp oregano
salt
3 T lemon juice
1 T olive or salad oil
2 T freshly chopped basil or 1 tsp dried basil
1/2 tsp sugar
1/4 tsp crushed red pepper
Preheat oven to 400.
Remove husks and silk from corn. With a serrated knife, cut the corn cross wise in 3 pieces. Cut zucchini into 3 inch chunks. Cut tomatoes lengthwise in half.
Place chicken breasts in large roasting pan. Sprinkle with oregano and 1/2 tsp salt. Arrange corn and zucchini around the chicken. Bake for 30 minutes. Remove from oven and add tomatoes. Cook for an additional 15 minutes or until chicken juices run clear and vegetables are tender.
In a cup, mix olive or vegetable oil, lemon juice, basil, sugar, crushed red pepper and 1/2 tsp salt.
Place chicken and vegetables on a platter and brush with the lemon mixture.
