Death By Chocolate cake

OK...I'll breakout the cake for a birthday!  Here it is:

 

Carrot Cake

    1 Large Carrot - Grated (One packed cup-full)
    1/2 cup Grated apple
    1/4 tsp Mixed spice
    1/4 cup Almonds
    1/4 cup Walnuts
    12 Dates Roughly chopped
    1 Pinch Salt
    1 Tsp Vanilla
    2 tsp Coconut oil
    2 tsp Lemon Juice
    1 tsp lemon zest
    1/2 tsp Ground cinnamon
    4 tbs Non-dairy milk Soy, almond, rice milk, anything would work here!
    .
    For the Frosting
    1/2 cup Cashew nuts soaked at least 3 hours
    2 Tbs coconut oil
    2 tsp Agave nectar (or other liquid sweetener)
    1 tsp Vanila essence
    2 tsp Lemon Juice
    1 tsp Lemon Zest
    1 Pinch Salt

 

The Vegan Pixie has the directions for free (sorry couldn't print it out) , if you are interested

I don't use Agave nectar, but sub maple syrup

Banana cake, with chocolate frosting made in a bundt pan.My Grandma make the best banana cake. But it is easy just  use a yellow cake mix and add banana's and walnuts. Yum. Banana's were a big part of her health ritual.

My favorite cake is an ordinary lemon cake that has an amazing frosting made of butter, sugar (not powdered), lemon juice and lemon rind. It has to be stored in the refrigerator because there is so much butter in the frosting.  And because of all that butter I haven’t made it in years.

My Mother was a really great baker, my favorite was her Orange Chiffon Cake.And it seemed like she could whip it up in minutes.I would go to visit and she also made cream puffs in just minutes for real. I miss those days so very badly.

Coconut cake for sure!   Maybe with a little crushed pineapple mixed in the frosting!!Woman Wink

While I enjoy baking, I would not be making my cake.  I have several that I really like, so I would want a slice of each.

 

Tres leches cake from Cowgirls in Santa Fe.  Strawberry shortcake from Traub's Bakery in Prospect Park, PA.  Lemon coconut cream cake from my local diner.  

 

Along with these cakes, I would want a slice of blueberry pie from West Street Cafe in Bar Harbor.  In fact, I would like my party to be there.

The next time that I hear salt and ice together, it better be in a margarita!
