YORK PATTY COOKIES

1/2 CUP BUTTER OR MARGARINE

1/4 CUP PACKED BROWN SUGAR

1/4 CUP POWDERED SUGAR

1/4 TEASPOON SALT

1 EGG

2 CUPS FLOUR (SIFTED)

1 TEASPOON VANILLA

1/2 TEASPOON ALMOND EXTRACT

WALNUT HALVES

PEPPERMINT COATING (SEE RECIPE BELOW)

FINELY GROUND WALNUTS


CREAM THE SUGARS, BUTTER, AND SALT IN A BOWL TIL LIGHT AND FLUFFY. (USE A MIXER AT MEDIUM SPEED). STIR IN EGG, FLOUR, VANILLA AND ALMOND EXTRACT. SHAPE BALLS IN ONE INCH BALLS. PRESS WALNUT HALF IN EACH BALL THEN RESHAPE IN A BALL. PLACE BALLS 1/ 1/2 INCHES APART ON GREASED COOKIE SHEET. BAKE AT 350* 12-15 MINUTES OR TIL GOLDEN BROWN. REMOVE FROM COOKIE SHEET AND COOL ON RACK..
PEPPERMINT COATING
MIX 12 MINIATURE OR 3 LARGE YORK PEPPERMINT PATTIES WITH 2 1OZ SQUARES SEMISWEET CHOCOLATE WITH 2 TABLESPOONS CORN SYRUP IN A SMALL SAUCEPAN. HEAT UNTIL MELTED. DIP COOKIES INTO THE PEPPERMINT COATING AND THEN INTO THE GROUND WALNUTS, ALLOW TO SET ON WAXED PAPER TO COOL.
